How to Prepare Your Business for a Health Audit in Lima: Complete Checklist

Health audits in Lima: who can inspect you and when?

In Lima, establishments that handle food, provide health services or serve the public can be inspected without prior notice by multiple agencies: DIGESA (mass-consumption food), DIRIS Lima (environmental health), SENASA (agricultural products), district municipalities and SUNAT during their joint enforcement operations.

Violations detected can result in fines of up to 50 UIT (S/. 265,000 in 2025), the temporary closure of the business, or the disqualification of the legal representative. The good news is that preparing isn't complicated if you have a documented control system.

What do health inspectors check?

Although each agency has its own protocols, the most common evaluation areas are:

1. Health documentation

  • Valid fumigation and pest control certificate
  • Staff health cards (up to date)
  • Sanitary registration for food or products (if applicable)
  • Valid municipal operating license
  • Hygiene and sanitation plan

2. Facilities and equipment

  • No evidence of pests (droppings, tracks, live animals)
  • Condition of walls, floors and ceilings (no cracks or moisture)
  • Proper food storage (raised off the floor, away from walls)
  • Drainage and sewage systems in good condition
  • Waste containers with lids and frequent emptying

3. Good Manufacturing Practices (GMP)

  • Personal hygiene of staff (uniform, hair covered, no jewelry)
  • Handwashing stations with soap and water available everywhere
  • Separation of raw and cooked food
  • Temperature control for refrigeration and cooking

Pest control as a critical requirement

The active presence of pests during an audit is a critical non-conformity that can result in the immediate closure of the establishment. Inspectors specifically look for:

  • Cockroach or rodent droppings in preparation or storage areas
  • Signs of rodent activity (tracks, gnaw marks, nests)
  • Live insects in food areas
  • Expired fumigation certificates or ones issued by an unauthorized company

Preparation checklist: 30 days before a possible inspection

Although inspections can happen without notice, this 30-day plan keeps you always prepared:

Week 1: Documentation

  • Check the validity of your fumigation certificate. If it expires within the next 30 days, schedule a renewal.
  • Update staff health cards.
  • Check that the municipal license is valid.
  • Prepare a physical and digital folder with all the documents.

Week 2: Internal visual inspection

  • Check hard-to-reach areas: behind equipment, under shelves, corners of storage rooms.
  • Look for signs of pests: droppings, tracks, damaged packaging.
  • Repair cracks in walls, floors and pipe seals.
  • Check that drains have grates in good condition.

Week 3: Preventive treatment

The most common mistake: assuming they won't come

Many businesses in Lima only worry about health documentation once they've already received an inspection notice. The problem is that the timeframe given (usually 24 to 72 hours) isn't enough for effective fumigations or to process certificates. A certificate issued the day before an inspection can raise suspicions about its authenticity.
